Indirect grilling:

The indirect grilling method is a technique used for cooking or baking on the grill at a slower pace and lower temperature than high heat direct grilling. As the name implies, food is not grilled directly over the heat, instead it's cooked by hot air circtulating around the food much like an oven. The indirect cooking method relies on regulated lower heat settings and a long period of time where the lid of gas grill is closed.

Off burner indirect cooking:

· Preheat the gas grill on high then turn off one area of burners when a target temperature has been reached.

· Indirect cooking falls within the MEDIUM heat range of about 300º F (148 ºC) to 450 ºF (232 ºC)

· Place whatever is being cooked indirectly over the unlit burners, heat from the lit burners will circulate throughout the cookbox and cook the food evenly instead of heavily from beneath.

· The indirect method is an effective way to use a grill to roast or bake foods that would otherwise be cooked indoors in a oven.

· The cast mini roaster holds and distributes heat evenly when roasting or baking various food items, the heavy lid locks in heat and moisture.

Care and washing instructions:

The easy to clean porcelain coating on this cast iron roaster should be cleaned by hand with a mild detergent to ensure continuous performance. Coating the inside with a cooking oil before use will help prevent sticking and make cleanup much easier. Take caution when using the roaster on the grill surface. Like all porcelain coated cookware, abuse can cause chipping and rusting. For grill, side burner, stove top or oven use.
